Spannocchia

This year, we have added a special experience to our course at Spannocchia. For nights five and six of the program, we will be staying at two exceptional partner farms: Tenuta di Paganico & Tenuta San Carlo. Tenuta di Paganico is home to a herd of the heritage Maremmana cattle who are still grazing amongst the forest to which they have adapted over millennia. Tenuata San Carlo is located on the former wetlands of the Tuscan coast, where they grow traditional risotto style rice. Participants will journey from forested hills to valleys and coastal wetlands with the opportunities to swim in the river and sea.
The Farm
Spannocchia is a 1,000 acre diversified farm in the Tuscan hills southwest of Siena. The farm is comprised of vineyards, olive orchards, grazing pastures for heritage breed cows and pigs, and small scale vegetable and herb production. Spannocchia preserves an ancient form of life in Tuscany that is based on community, respect for tradition, and a responsible use of resources. The farm serves as an international model for sustainability, and for more than twenty years has hosted interns from around the world to learn about responsible tourism. Participants will stay in a 12th century Tuscan castle and engage in a community of farmers, interns, chefs, butchers, and food processors.
The Team
The Spannocchia farm and programs team bring a diverse array of expertise and passions to the course experience. Participants will learn from Niccolo Merighi, Farm Education Director and avid natural winemaker; vegetable farm manager, Yago Clavo Roman, who brings a permaculture background and deep passion for observing natural processes to his work; and the onsite culinary team, which works almost exclusively with produce from the land.
